🛒 INGREDIENTS

  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 2 cups pumpkin, diced (fresh or canned)
  • 1 tsp ground turmeric (or fresh grated turmeric, if available)
  • 2 vegetable stock cubes (low sodium preferred)
  • 5 cups water
  • 1 handful of fresh coriander leaves, chopped
  • 1 tbsp olive oil or coconut oil
  • Sea salt and black pepper, to taste

  1. In a large pot, heat the olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in the carrots, pumpkin, and turmeric. Cook for 3–4 minutes until fragrant.
  3. Add water and vegetable stock cubes. Bring to a gentle boil, then reduce to a simmer for about 20 minutes, or until vegetables are soft.
  4. Blend the soup with an immersion blender until smooth and creamy.
  5. Season with salt, pepper, and garnish with fresh coriander leaves before serving..
